Native to the Amazon, it has characteristics that make it almost unique. Its fillets and loins are of excellent size and height, without bones, and can be served stewed, grilled, baked or fried. It was once called Amazon cod because in the region it is consumed salted. It promotes benefits for the ecosystem and communities that live off fishing. It has a high biological value and is an easily digestible food. It is low in fat (about 1.2g per 100g) and, consequently, has a low calorie content, making it a recommended protein for those who want to lose and control their weight. The vast majority of its fats are polyunsaturated, mainly omega 3 fatty acids.
