The yellow hake, Cynoscion acoupa (Lacépède, 1801), is a species of the Sciaenidae family that occurs in tropical and subtropical waters off the Atlantic coast of South America. It is a rich source of proteins with high biological value. 100 g of hake contain almost 19 g of protein and only 1 g of fat. In addition, this fish is rich in vitamins A, E, C and group B. It has a lot of magnesium, phosphorus, sodium, iodine, calcium, potassium, sulfur, iron, fluorine and zinc.
